Carolina Bazan

Carolina Bazán Bañados (* 1980 in Buenos Aires , Argentina ) is a Chilean cook .

Career

Carolina Bazán is the daughter of a Chilean diplomat and has four brothers. Up to the age of 13 the family lived in different parts of North and South America, such as in New York and Washington in the USA and in Peru . Her mother, the ambassador's wife, was interested in cooking and the respective country kitchens and entertained guests more often, with the children helping.

In 1993 the family returned to Chile. After completing her schooling, Bazán trained as a cook there and then, at the age of 23, opened the Ambrosia restaurant together with her mother in the Chilean capital Santiago in 2003 , where she, as head chef, focused on local flavors.

Bazán went on several trips and gained impressions of regional cuisines and leading restaurants both in Chile and in various countries such as Peru, Brazil, Italy and Thailand. In 2010 she went to France for a year, where she completed a further training course in Paris at the École Supérieure de Cuisine Française (ESCF - Higher School of French Cuisine at Ferrandi) and then worked for Grégory Marchand in his restaurant Frenchie . When she returned to Chile, she changed her cooking style and revised her menu.

In 2013, Bazán relocated the location of their Ambrosia restaurant to Las Condes on the outskirts of Santiago and has since been operating it under a new concept as a “modern, family bistro restaurant outside of the traditional gastronomy”. The Ambrosia Bistro was added in 2017 , ten kilometers from the restaurant in the neighboring municipality of Providencia . Since 2014, the Ambrosia has been included in the ranking of the “50 best restaurants in Latin America” ( Latin America's Top 50 Restaurants ). In 2019, Bazán was named Latin America's Best Female Chef by San Pellegrino .

Her style of cooking is playing with intense, but also simple flavors. Carolina Bazán combines this with typical Latin American flavors. She works with fresh market products and offers a menu that changes daily depending on the season.

Private

Her life partner is sommelier Rosario Onetto, with whom she works. Bazán has two children born in 2015 and 2019. The couple live with the children in Providencia .
