Chana masala

Chana Masala ( Hindi चना मसाला , Panjabi ਚਣਾ ਮਸਾਲਾ Cana Masala ) or Chole ( Hindi छोले chole ) is on the Indian subcontinent widespread Curry . Chana Dal translates as chickpeas , so the main ingredient is also this one. The often rather dry curry is characterized by its typical sharpness and light acidity, which is due to the use of tomatoes and lemon juice. It is traditionally served in combination with Kulcha or Bhatura .

In addition to chickpeas, the use of tomatoes and onions typically makes a chole or chana masala.

The Chana Masala spice mixture of the same name usually contains warm, intense and fruity spices: cumin, coriander, cinnamon, cloves, black cardamom, king cumin, black pepper, bay leaves, chillies, fenugreek, pomegranate seeds, mango, ginger and black salt.

Chana Masala is particularly common in the north Indian Punjab . There it is traditionally served with bhatura or kulcha .

Pakistan

In Pakistan there is a widespread variant of the dish under the name Alu Chole (chole with potatoes) and is offered as a snack, especially in large cities such as Karachi or Lahore .
