Kulcha ( Panjabi ਕੁਲਚਾ , Hindi कुल्चा [kulcā]) is a soured flatbread made from highly refined wheat flour ( Maida ) that is widespread in India and Pakistan and , unlike Naan, is prepared without yeast . Kulcha is typically served with a little ghee in combination with chole or consumed warm with tea.

Kulcha is typical of Indian Punjab cuisine ; the city of Amritsar in particular is known for its flatbread. In Pakistan, Kulcha is popular as a breakfast side dish in the regions of Asad Kashmir , Gilgit-Baltistan , Hazara and northern Punjab .

preparation

For the production of Kulcha, a dough is made from maida, water, yoghurt, oil, sugar and salt, which is then left to ferment for a few hours . The dough is rolled out thinly in portions and preferably baked until golden brown in a tandoor .
