Khachapuri ( Georgian ხაჭაპური , xɑtʃ'ɑp'uri ) is a specialty of Georgian cuisine . It is a gratinated cheese bread, which is usually eaten in Georgia as a snack for a small hunger.

The yeast dough for the white bread must rise first. It is then rolled out and filled with cheese , eggs , sour cream and garlic and, depending on the variant, other ingredients. The filled dough is baked on a preheated frying pan under a closed lid and then coated with butter.

Georgian cuisine knows different types of khachapuri. They mostly come from different regions of the country. The best known are Atscharuli khachapuri in Adjara with sulguni cheese and a fried egg , Megruli khachapuri from Mingrelia with cheese bread and outside, Imeruli khachapuri from Imereti , round with Imeretian cheese, Swanuri khachapuri from Svaneti , also Tschwischtar called Ratschuli khachapuri from Racha and Ossuri Chatschapuri from South Ossetia with cheese and mashed potatoes . Also popular is the triangular penowani khachapuri , which is made from puff pastry and sulguni cheese.

Khachapuri is already eaten for breakfast in rural areas of Georgia . In cities it is offered as a quick snack at kiosks , in small shops , bistros and restaurants .
