The DEBAG German Backofenbau GmbH is a manufacturer of oven, baking and fermentation and refrigeration. DEBAG's customers include the bakery, but also food retailers, restaurants, hotels and gas stations. DEBAG is active in 50 countries and has foreign companies in Poland, France, Russia and the USA.

history

DEBAG has its roots in both Munich and Bautzen.

Alois Paul Linder founded the oven construction business in Munich in 1911 . In 1936 an innovative circulation heating system for ovens, the so-called monsoon system, was invented and patented.

In 1924 the company Gustav Schmidt und Söhne OHG was founded in Bautzen . The company existed in this form as a company with state participation until 1972. After its dissolution, the VEB Backenofenfabrik Bofaba Bautzen was founded in the same year and incorporated into the " Progress Agricultural Machinery " combine . This existed until 1989, after which it was converted into a limited liability company.

In 1990 VEB BOFABA Bautzen and DEBAG were merged. This is how the company was created in its current form with its headquarters in Bautzen. The Munich location was closed.

Monsoon baking technique

The monsoon baking technique is named after the monsoon tropical wind and was used as a model for air circulation in the oven. The air flow ( convection ) transfers heat to the dough piece. The air in the baking chamber flows slowly and changes direction regularly. This patented hot air system enables an even heat transfer to each baked good, even with a high density of items.
