Dominique Persoone (born September 24, 1968 in Bruges ) is a Belgian chocolatier . He became known for his extraordinary chocolate creations with unexpected flavor combinations. Persoone describes himself as a "shock-o-latier".

Life

Persoone attended the hotel management school "Ter Groene Poorte" in his hometown of Bruges. In Paris he worked for Pierre Hermé, among others .

The Chocolat Line in Bruges

In 1992, Persoone and Fabienne Destaercke opened “The Chocolate Line”, a praline and chocolate shop in Bruges . The production takes place near Bruges. In 2004 "The Chocolate Line" was included in the Michelin Guide , in which chocolatiers are rarely listed. In 2010 “The Chocolate Line” opened a second store in Antwerp .

As a surprise for the joint birthday party of the Rolling Stones Ron Wood and Charlie Watts , Persoone invented - at the request of the musicians' wives - the "Chocolate Shooter", a device with which you can shoot chocolate powder into your nostrils. Other unusual creations by Persoones include: B. Chocolate Lipsticks and Massage Chocolate.

In collaboration with the star milliner Stephen Jones, Persoone developed a series of chocolates in the shape of hats that Jones designed. For the opening of the Choco Laté Festival 2011 in Bruges, Persoone and the designer Nicky Vankets designed a 20 kilogram chocolate dress that was worn by the reigning Miss Belgium.

In 2008 Persoone published the book Cacao - The Roots of Chocolate , in which he describes his journey to the origins of chocolate in Mexico , enriched with numerous original recipes. In 2009 the book was awarded the “Gourmand Cookbook Award” as the “best chocolate book in the world”. In 2012 Persoone's second book, Shock-o-latier, was published .
