Dobislaw came from a middle-class family in Berlin-Kreuzberg ; his grandfather Gustav Dobislaw was a master distiller and owner of the corner house at Obentraut- / Großbeerenstraße 17a, where he ran a liquor factory and bar. Ernst Dobislaw completed his apprenticeship as a distiller, winemaker and businessman with his father Paul Dobsilaw, master cooper and independent spirits manufacturer who took over his father’s business in 1904 and continued it until his death in the early 1940s. The bar of the Dobislaws later became the Bacchus cellar , which until 1988 belonged to the legendary Kreuzberg pubs .

After working in his parents' company, Ernst Dobislaw acquired a spirits factory, which he managed until he was drafted into the armed forces .

After returning from captivity , he took a position in the Department of Drinking Spirits and Liqueurs (ATL) in the Fermentation Institute (IfG). He was particularly involved in the reconstruction of the experimental liqueur factory of the Research and Training Institute for Spirit Manufacture (VLSF) and the teaching and teaching system of the IfG. In 1948 the specialist courses for distillers and liqueur manufacturers were resumed under the direction of Ernst Dobislaw and Professor Georg Haeseler. In 1954 the first master distiller course was held. On July 3, 1954, Ernst Dobislaw was the first to successfully pass the master distiller exam at the Berlin Chamber of Commerce and Industry . In the following years, he looked after more than 1000 participants in 60 distiller courses, in which Dobislaw supervised and taught in particular the internships as well as the liquor and drug studies.

In 1958, Dobislaw supervised the new building of the experimental liqueur factory as a teaching and training facility in the ruins of the old malt house of the university brewery; Before that, the test liquor factory was operated in the IfG distillery. Until his retirement in 1968 he was head of the VLSF's experimental liquor factory at the Institute for Fermentation Industry.

Dobislaw wrote a variety of articles for The Brandy Industry and other journals. He was valued by the spirits industry as a consultant and was entrusted with the development of special recipes, some of which are still used in spirits production today. His in-depth knowledge of various herbs enabled him to develop what he called the drug scent organs, which are still used in the Prussian Spirits Manufactory . This is also where the dry gin he developed , which he marketed as Ernst Dry Gin in his honor , is being produced again.
