The Preussische Spirituosen Manufaktur (PSM) is a manufacturer of spirits and liqueurs in the Berlin district of Wedding and an active museum of the experimental and teaching institute for alcohol production (VLSF).

history

From 1854: Development of associations and research institutions

On June 19, 1854, 127 representatives of North and East German potato distilleries founded the Association of Alcohol Manufacturers in Germany in Berlin . In addition to the publication of its own magazine, a test station under the direction of Max Delbrück was put into operation on September 28, 1874 , the premises of which were originally in the area between Invalidenstrasse and Dorotheenstrasse. In addition, in 1874 the establishment of its own research institute, the Institute for Fermentation and Starch Production , was later joined by other shareholders such as the Experimental and Training Institute for Brewery (VLB) founded in 1883 . In 1876, a glass blowing factory was built in order to be able to manufacture the laboratory equipment and vessels required for the test station and the institute.

An existing distillery in Biesdorf was leased from Delbrück in 1879 and expanded for experimental purposes. The main subject of technological developments have been improvements in the production of ethyl alcohol of agricultural origin .

A new building on the grounds of the Agricultural University expanded the laboratories in 1884. In 1888 the association opened a potato culture station and in 1892 founded a yeast cultivation institute .

In the manor district of Plötzensee , new buildings were created in 1897 specifically for the needs of the VLSF and the institutions cooperating with it. These facilities VLB and in particular belonging Laboratory of agricultural machine technology , the association of strength prospects in Germany , the Research Institute of the Association of German potato dryer , the Research Institute of the yeast industry , the Research Institute of grain distillery and the Research Institute of vinegar manufacturers . In addition, the Institute for the Sugar Industry , the Prussian Institute for Infectious Diseases and other facilities were located on this science campus at the beginning of the 20th century . A test distillery and a test vinegar factory were also built on the site on Seestrasse , as well as a large exhibition building in 1901. Between 1907 and 1909 further stations for the production of drinking alcohol and liqueur were added.

On September 3, 1939, the name of the association was changed to the experimental and training institute for alcohol production in Berlin (VLS).

On June 25, 1971, the general meeting decided to expand the name to include the experimental and teaching institute for alcohol production and fermentation technologies in Berlin (VLSF). As a result of the expansion of tasks, a new building was necessary, which was built from 1973 to 1976 for the Research Institute for Biotechnology at the Institute for Fermentation and Biotechnology (IfGB), which is maintained by the VLSF . Until 2002, the IfGB was organized as a BGB company of the three shareholders VLB, VLSF and VH and has since been operated solely by the VLB.

In view of the looming abolition of the spirits monopoly , the distillery operations of the VLSF were discontinued in 2001 and the association dissolved in 2002 following insolvency proceedings in which the brewery experimental and training institute took over all assets.

Experimental liquor factory

A test liqueur factory was already operating in Dorotheenstrasse , and its products were sold under the Preussische Spirituosen Manufaktur brand . The GmbH founded for this purpose continued its activities after the dissolution of the VLSF, but had to file for bankruptcy in 2005. In order not to give up the operation of the systems completely, Höbbel & Pukownick GmbH, which already existed as a VLB service provider, took over the continuation. The production was organized by the retired TU and IfGB professor Ulf Stahl and the qualified hotelier Gerald Schroff. In 2009, Höbbel & Pukownick GmbH outsourced the PSM division and handed it over to Schroff & Stahl GbR . After the destruction as a result of the Second World War, a new test liqueur factory was set up in the remains of the old malt house, which the VLSF also relinked on the front and back. The production of the experimental liqueur factory was only possible again in the 1950s with the help of Ernst Dobislaw (1903–1984).

The new distillery

In 1875 a distillery school was opened to train distillery managers. The test station served to train and qualify all German distillers and distillers . In cooperation with the Agricultural University , a course to become a certified master distiller was set up from 1903. Since 1908, both have also offered a degree in distillery engineering; from 1933 the right to award doctorates was added.

The burner training continued until the end of the own distillery in 2001, but is to be resumed. Since then, however, the training of distillers has continued; In cooperation with the IHK Berlin, the IfGB uses the premises of the VLSF / PSM for the master distiller exams. This is the only such qualification opportunity in Germany.

In May 2017, the VLB signed a long-term cooperation agreement with the two operators of PSM, Ulf Stahl and Gerald Schroff , to improve and secure the training and further education of distillers and distillers. To this end, a distillery will be set up again.

The new still from the Arnold Holstein company was installed in May 2019.

Products

Klarer and Adler Dry Gin

The manufactory refers to the first founding of a distillery under the responsibility of Max Delbrück and added his liqueur and spirits brands to its range again.

Eagle

The Adler Spirituosen were the first independent spirits brand, which became known in particular for Adler Gin and grain brandies.

In the 20th and 21st centuries, Adler vodka , the electoral bitters , wild raspberry spirit etc. came on the market as well as many different liqueurs such as mustard, ginger, elderberry and egg liqueur . There is also the Adler gin in porcelain bottles made by KPM , which was created by the designer Trude Petri in the 1950s.

In cooperation with PSM, Theo Ligthart has been running the Das Korn art project since 2008 .

Rose, quince, elderflower and other aromas from the company's own distillery are processed into liqueurs under the Sanssouci trademark . Drawings of the Bachantinnen from the facade of the Sanssouci Palace can be seen on the labels of the liqueur series.

Michelberger

A herbal spirit and a herbal liqueur are produced and sold in cooperation with the Michelberger hotel chain.

Panorama with stills and distilleries from three centuries

A large number of equipment has been preserved in its original condition from 1874, including the drug fragrance organ. It is a collection of fragrances and flavors from flowers, herbs, roots, bark and seeds that are used for the production of spirits. Other original devices from the history of the VLSF, such as B. the vacuum distiller from 1952 are added. All museum furnishings are in an operational condition and are used both for manufacturing operations and for training purposes.

Guided tours of the Prussian Spirits Museum are available for groups.
