Fischer am Rathaus is a bakery and pastry shop in downtown Dortmund . It was founded in 1848 and has been family-owned ever since.

The bakery is considered to be the inventor of the Dortmund salt cake , a roll specialty that is often eaten here with meat and onions.

The craft business was founded in 1848 by Johann Gottfried Fischer and is now run by the sixth generation of the family by master baker Heiner Fischer (* 1977).

The company originally owes its name to its location near the Old Dortmund City Hall , which was located on the Alter Markt from the 13th century to 1955 , as the oldest stone city hall in Germany.

The original Fischer bakery at the town hall was on the corner of Brauhausstrasse and Balkenstrasse. The bakery building erected there between 1870 and 1892 was hit by three bombs during the fourth major attack on Dortmund on October 6, 1944 during the Second World War . The building was destroyed and the pictures and original recipes that had been preserved were also lost. So there is no evidence today whether the Fischer bakery produced the salt cake as early as 1848 or only developed it afterwards.

After the attack, the bakery was poorly restored. However, as a result of the reorganization of the old town, reconstruction in the same place was out of the question. In 1959 the bakery moved to its current location on Betenstrasse. It was again near the old town hall and is now also near the new town hall built in 1989 , so the name is still correct.

The family business survived the trend of franchise bakery chains that had been going on since the 1990s , as a result of which more and more owner-managed individual bakeries gave up. Most recently, Fischer was able to expand his business again at the town hall. The house was renovated in August 2015 and the upper floor has now opened as a café.

Fischer am Rathaus is a typical Dortmund company and part of the local tradition. The traditional Hövels house brewery , one of the last remaining breweries in the former beer town of Dortmund, cooperates with Fischer am Rathaus as the original Dortmund bakery and thus one of the few other survivors of another time. The house is particularly known for the salt cakes invented there, today a regional specialty. Tourists, too, are often surprised at the traditional bakery in Dortmund.

If the bakery in the city is traditional and down-to-earth, it recently surprised more often, for example with the modern expansion of the café in 2015 or the charitable campaign under the unexpectedly provocative motto “Titti-Muffins” in October 2016, than free pink muffins there in breast form were distributed in a joint action with the Westphalian Breast Center .
