Life and vision

Gastón Acurio Jaramillo was born as the only son of Gastón Acurio Velarde and Jesúsa Jaramillo Razuri. He has four older sisters.

After dropping out of law school in Lima, he learned to cook in Europe at the Sol de Madrid hotel school in Spain and at Le Cordon Bleu in Paris . There he met his future wife Astrid Gutsche (* 1971), who came from Germany and grew up in France. They have two daughters: Ivalú and Kiara.

In 1994 he returned to Peru with her and they opened a French restaurant together, after all they had both learned the trade in Paris. But sourcing the right ingredients proved difficult and Acurio began to deal more intensively with the cuisine of his homeland. He played a key role in the development of the so-called Cocina Novoandina : He enriched international gourmet cuisine with typical Peruvian ingredients and vice versa, Peruvian dishes were reinterpreted by Astrid y Gastón and presented in an attractive way for gourmets. Today he is one of the most renowned chefs in Latin America .

His motivation: “I've had the best upbringing since I was born. I grew up with the best family, in the best house in the most beautiful part of town. I studied at the best university. So it's no wonder I have come a long way in my life. I had opportunities that few Peruvians get. Now it is my turn to give back to my homeland what I got through my work. "

His vision he shared with students at the Universidad del Pacífico in his opening speech in March 2006: "In 20 years there will a Peruvian Skewered Beef eatery next to a pizzeria in every city in the world anticucher give, next to a burger shop a Peruvian sandwich Bistro Sanguchería next a sushi bar a Peruvian fish restaurant Cevicher ía ... The Peru brand is to become a synonym for high gastronomy and to transfer its attractiveness to other Peruvian products ”. Acurio founded the Pachacútec Foundation in the poor suburb of Lima of the same name to enable less well-off young people to train as a cook in a cooking school.

In 2018 Gastón Acurio received the ECKART award for innovation. “Astrid Gutsche and Gastón Acurio are no ordinary restaurateurs: With the courage to stand up to haute cuisine with local ingredients and recipes, they are revolutionizing the culinary world of an entire country. Gastón Acurio focuses on the basic values of cooking: quality, creativity and regionality. The social commitment to developing one's own country into a brand with one's creations and thus wanting to lead to prosperity - that deserves the award for innovation ”, Eckart Witzigmann explains the decision of the jury.
