The Hirsch Brewery Honer is a German family-owned brewery in Wurmlingen .

history

The brewery was founded in 1782 by Ludwig Aeble as an inn brewery for the Schildwirtschaft “Zum Hirschen” in Wurmlingen . The first change of ownership took place in 1861 when Josef Zepf took over the brewery. His son Heinrich Zepf began as the new owner in 1865 with the delivery of foreign inns next to the parent company. When Fanny Zepf and the Spaichingen- born master brewer Heinrich Honer got married, he took over the brewery from his father-in-law in 1897. Since then, the brewery has been owned by the Honer family. In 1936 the management passed from Heinrich to his son August Honer, who passed it on to his son Rainer Honer in 1960. He is still the managing director today, in 2009 his daughter Gabi Lemke joined the management. On May 4, 1997, a fire broke out in a warehouse on the brewery's premises, several hundred barrels, refrigerators and 20 pallets of empties were destroyed.

The brewery relies heavily on regional roots and the use of regional ingredients. The brewing malt comes from Baden-Württemberg . In addition, cultivation contracts for barley malt have been in place with several farmers around the brewery since 2015. The hops come from the southern German growing areas of Tettnang and Hallertau to Wurmlingen. The brewery also has its own source of brewing water directly under the storage cellars. Every two years the brewery organizes the “Brewery Farm Festival” with several thousand visitors. This is also where new products or extensions to the brewery are usually presented. The brewery premises also include the "Hirsch Beer World", which opened in 2006 and combines a museum on the history of beer with a small creative brewery in which groups of guests can brew their own beer.
