Hofer Schnitz

Hofer Schnitz is a German one- pot dish that consists mainly of vegetables.

Origin and name

Schnitz is traditionally used in East-Upper Franconian cuisine. Especially in the Hofer Land , but also in Bayreuth and in the Fichtelgebirge and in the Franconian Forest, the schnitz is one of the traditional regional specialties.

Schnitz describes a stew with many types of vegetables. In order to serve them bite-sized, they have to be cut. Occasionally the diminutive form Schnitzla can also be heard.

Ingredients and preparation

The schnitz mainly consists of vegetables, potatoes and sometimes meat. The ingredients of the Schnitz depend on the season. The vegetables include carrots, celery , kohlrabi and leeks in water, vegetable or meat broth. Chicken, beef soup meat or "Schöpsen", i.e. mutton, are used as meat.
