As Iwatake ( Jap.イワタケ; Umbilicaria esculenta ) is in Japan an umbilical braid , respectively. The name is derived from iwa : japan. growing on stone: take : japan. Mushroom.

The lichen grows on steep rock faces and is laboriously collected. After an elaborate preparation it is eaten as a soup, salad or crispy in fat like potato chips . The cookbook "Ryorimonogatari" from 1664 serves as the oldest written evidence .

Iwatake dishes were prepared on special occasions such as weddings or funerals . Today this lichen is rarely found in domestic kitchens or restaurants.
