Liver bread

Liver bread , westf. Liäberbraut , twents Bakworst , is a cooked sausage from the Münsterland and the Dutch district of Twente , which is made from pork , liver , fatty bacon , flour and spices .

To make it, the meat is first cooked with onions and turned through the meat grinder . Then it is mixed with raw liver, diced bacon, spices, broth and flour, also finely chopped in a meat grinder , the resulting mass is filled into the intestines and cooked over low heat.

Liver bread, unlike most other liver sausage types, is not used as a topping on bread, but is sliced, fried and served with side dishes such as beetroot or fried apple slices , also in combination with sausage bread (a black pudding with meal ), potatoes or mashed potatoes and sauerkraut . Liver bread, just like sausage bread, is sometimes served fried in stews (bean, pea, lentil soups ).
