Sweet beer

As Süßbier or malt beer generally means a dark top-fermented Nährbier with little bitter substances . With the exception of Bavaria and Baden-Württemberg , the addition of sugar , sugar syrup and caramel is permitted.

Manufacturing

The beers are a wort 7-8 degrees Plato brewed . After filtering, enough sugar is added to raise the original wort content to around 12 degrees Plato. Different malts are used for the malt fill , mainly dark malt, to which dark caramel malt may be added. The rest is light malt. The addition of sour malt is permitted in order to achieve the desired pH of the brew from 4.5 to 4.9.

Alcohol content

With malt beer , the yeast is added at around 10 ° C. There is only a slight alcoholic fermentation and very little alcohol is produced . The alcohol content of low-alcohol malt beer is 1.5  % vol. , Non-alcoholic beers contain less than 0.5% vol.

Until the 1950s, malt beer was generally used in the Federal Republic of Germany . Following a ruling by the Federal Court of Justice in 1958, malt beer with added sugar may not be called beer in Germany , so that it has since been traded under names such as malt drink or the like. Well-known brands are Vitamalz and Karamalz . Contrary to this legal situation, the term malt beer is still used colloquially . In the GDR , malt beer was produced and sold as such until 1990, including the variant of the bottom-fermented double caramel .
