Mapo tofu
Mapo Tofu , also Mapo Doufu ( Chinese 麻 婆 豆腐 , Pinyin Mápó Dòufǔ ), is a Chinese dish from the Sichuan cuisine .

Mapo ( 麻 婆 , mápó , short for 麻子 婆婆 , mázi pópo ) means “pockmarked old woman” in Chinese . The name Mapo Tofu means “ tofu in the style of the pockmarked old woman” . According to tradition, a pockmarked woman Chen ( 陳 麻 婆 / 陈 麻 婆 , Chén Mápó ) in Chengdu , Sichuan invented the recipe in 1874 . She was the wife of Chén Chūnfù ( 陳春富 / 陈春富 ), owner and cook of a small restaurant called Chén-Xīngshèng-Gasthaus ( 陳興盛 飯鋪 / 陈兴盛 饭铺 ). Hence this dish became known as Chen Mapo Tofu .
A vegetarian variant of the dish without minced meat is often referred to as Mala Tofu ( 麻辣 Má , Málà Dòuf „-" fiery hot tofu ").
In Japan, Mapo Tofu has become a popular dish in Japanese cuisine under the name Mābōdōfu ( Japanese マ ー ボ ー 豆腐 / マ ー ボ ー ド ー フ / 麻 婆 豆腐 , rarely マ ー ボ ー ど う ふ ) .

The dish is now prepared in many different ways in many Asian countries. The main ingredients are minced meat (minced beef in the original recipe ) and tofu , although the original sauce was originally made with douchi ( 豆豉 , dòuchǐ - "fermented black beans"), doubanjiang ( 豆瓣醬 / 豆瓣酱 , dòubànjiàng - "fermented bean paste", jap. 豆 板 醤 ), soy sauce and Szechuan pepper are very spicy ( 川椒 , chuānjiāo or 花椒 , huājiāo ), whereas in other regions it was prepared a little milder. Some basic stock (stock) if you have it on hand, otherwise simple water would be sufficient. It is often thickened with starch . Depending on the region, other ingredients such as B. spring onions , red peppers or Spanish pepper , garlic , sesame oil found entrance.
