In 1886 Josef Herz took over the Schwarzer Ochsen brewery restaurant in the Ulm suburb in Memmingen. In 1897 the brewery already had a beer output of 2,836 hectoliters, making it the fourth largest brewery in the city. Already in 1906 the output was 4321 hectoliters, making the brewery the second largest in the city. At that time there were still 21 breweries and 35 pubs in Memmingen. The merger of three breweries on June 1, 1911 (Brauerei zum Schwarzen Ochsen , owner Josef Herz, Brauerei zum Schwarzen Adler , owner Wilhelm Bilgram and Brauerei Weißes Ross , owner Fritz Halder) and conversion to a joint stock company resulted in the first large brewery in Memmingen. It was called the Bürgerliches Brauhaus . The Black Ochsen Brewery had the most modern brewery equipment, so it was decided to use it as a joint brewery. Already in the years 1911/1912 the beer output was 40,000 hectoliters. In 1912 the young master brewer Albert Sayle from the Pschorr brewery was lured away by Josef Herz to Memmingen. After the death of Josef Herz senior, Max Herz and Josef Herz jun. In 1920 Albert Sayle took over the management of the Bürgerliches Brauhaus and Josef Forster chaired the supervisory board of the stock corporation. On September 2, 1920, due to economic difficulties, the two largest breweries in Memmingen, the Bürgerliche Brauhaus AG, Memmingen and the Engelbrauerei Memmingen Gebrüder Bilgram merged to form Bürger- und Engelbräu Aktiengesellschaft . The directors Albert Sayle and Hugo Bilgram formed the board. In the pre-war years (1923 to 1939) several restaurants were taken over, the Benedictine brewery Ottobeuren was incorporated, the two wheat beer breweries Jaut and Steinbogen and the Waldhorn brewery (all in Memmingen) were bought. Already at this time branches were established in Munich , Augsburg , Konstanz , Besigheim , Oberurbach , Hindelang , Geislingen an der Steige and Munderkingen and the Benedictine brewery Ottobeuren was affiliated. In 1938 Albert Sayle succeeded in increasing beer sales to 128,000 hectoliters. In the Second World War, however, sales fell back to the 1912 level (40,000 hectoliters).

In 1948 the brewery facilities were partially renewed and new rooms and machines were acquired to cope with increasing bottled beer sales. The storage capacity was expanded through renovations and new buildings at the previous location in the Ulm suburb, the fermentation cellar was significantly enlarged and the technology was modernized in order to produce beers that were biologically and tastefully flawless for the times. From 1955 onwards, beer sales from the pre-war years were exceeded again. The current managing director Jochen Kesselschläger joined Bürger- und Engelbräu AG in 1972. Director Albert Sayle died in 1973. In 1977 it was decided to build a new building on the "green field". Jochen Kesselschläger, who has been a member of the Executive Board since 1975, managed to build the new B&E building in just two years until it was ready for production. When it opened, the B & E was the most modern brewery in Europe. In 1986 the traditional Weitnau brewery in the Allgäu was bought with an output of around 30,000 hectoliters per year and 25 employees. The new subsidiary, whose jobs were completely retained, brought brands such as the Alpkönig to the brewery. In 1990 beer was delivered to Saxony for the first time. As early as 1992 you could drink a B & E in over 150 restaurants in Berlin . Thanks to massive collaborations, the customer base has been expanded to over 350 restaurants and bars in recent years. The brewery had its first stand at the Green Week in Berlin in 1991.

In 1997, profound differences of opinion between the owner families involved (Kesselschläger and Bilgram) about the conceptual orientation of the company resulted in Jochen Kesselschläger, the board member responsible for technology and sales, being relieved of his office. This was mainly made possible by the fact that he introduced cost-cutting measures. The Kesselschläger family, themselves majority shareholders, could not change that. This - especially because it was spread widely in the press - resulted in massive damage to the company's image. However, the Kesselschläger family bought all of the shares of the previous families (a total of over DM 20 million). It was primarily through this commitment that the brewery was saved from a complete collapse. In the years that followed, the company worked hard to make up for the damage to its image on the one hand and the decline in beer sales on the other. In 1998, the former was B & E to Memminger Brauerei AG renamed.

In 2000 the Ulmer-Münster brewery was bought.

The previous legal form of the AG was converted into a GmbH in 2003 . This made the brewery a private brewery again. For a number of years now, the Memminger brewery has also been increasingly exporting its beers. You can already drink Memminger beer in Russia , Italy and Bulgaria . In 2008, Jochen Kesselschläger's two sons received power of attorney.

In the DLG -Prämierung in January 2008 five gold medals for the varieties were Alpkönig yeast wheat beer , wheat beer , Light White , Dark wheat beer and Carthusian wheat beer achieved. All types of beer submitted by the brewery were awarded a prize.
