As an artist, Sönmez deals intensively with the Turkish Ebru technique of marbling and the specific motifs that arose during the Ottoman period . Among other things, he is interested in a special form of stencil technique (Akkase) that was developed in Istanbul in the 16th century . Motifs from Ottoman calligraphy are cut as stencils and placed on the marbled ground before the colors are lifted off with paper. The lettering then appears as a light recess in the marbled surface. With his extraordinary and unique style, he was able to expand the previously common motifs of flowers, textures and patterns and create individual image motifs. His visionary landscapes and underwater worlds, which are realized in Ebru technique and which are particularly characteristic of his artistic independence, attract particular attention. His colored paper works are represented in the large European and North American colored paper collections and art libraries.

As a historian of colored paper, Sönmez deals intensively with the origins of various colored paper techniques and the interactions between the Ottoman world and, above all, the German-speaking cultural area, where since the late 16th century there has been a great interest in Turkish paper in family books, among other things . Through numerous books, articles and lectures, he brought his research on the marbling technique and the history of Ebru to a large audience.
