Neisser Konfekt or Neisser Pfefferkuchen is a gingerbread specialty that originated in the Silesian town of Neisse .

The vast Silesian forests were an excellent base for the Zeidler , the honey collectors, and thus for the honey necessary for making gingerbread; along one of the most important trade routes of the Middle Ages, the Via Regia Lusatiae Superioris , spices from all over the world came to the Silesian cities.

A tombstone in the St. Jakobus Church in Neisse can provide information about the status of the Neisser Pfefferküchler : In 1633, "at the age of 58, George Kehr Lebkuchen Bäcker and his wife Susanna" , is the inscription on an affluent one Epitaph - he is the only craftsman who is buried in the midst of bishops and scholars in this church.

In 1677 the Prince-Bishop of Breslau, Friedrich von Hessen-Darmstadt, allowed the Pfefferküchlers of the Prince-Bishop 's residence city of Neisse to found their own guild after violent disputes between them and the white bakers . The document is now kept in the Opole State Archives.

Orders for Neisser Konfekt, those small, spicy-tasting, gingerbread-like cookies that have been famous everywhere for decades, come from all parts of Germany and abroad. Although the proven manufacturing recipes have been used for three hundred years, everything is made in the most modern ovens and machines, often so that no human hand comes into contact with it.

After 1945 the efforts of the Neisser Pfefferküchler to re-establish themselves in their new places of residence were crowned with little success. The businesses that initially dared to start over have since given up or are working as “normal” local bakeries and only operate the Neisser gingerbread factory as a small seasonal side business for steadfast lovers of the Christmas sweets of their childhood.

Ingredients

The basic ingredients of Neisser Konfekt are four parts of rye flour, two parts each of honey and sugar and one part of ground almonds. There are also eggs and spices, cinnamon , cardamom and cloves . Potash is used as a leavening agent.

Depending on whether they are to be turned into "brown confectionery" or "chocolate confectionery", the gingerbreads, which are baked round or in the shape of flowers, are covered with a glaze of dark chocolate or icing, the latter only being spread thinly and after the glaze has dried in a second step get their characteristic icing lines.
