The ham and long-life sausage producers from Norcia once roamed the whole of central Italy as wandering butchers in winter when the area snowed in.

Today the name Norcineria is also used in Umbria's neighboring regions of Tuscany and Latium , but its meaning has been diluted and the product range expanded: In addition to the core products, the sale of other types of meat (e.g. lamb) is permitted, and other regional products such as dried porcini mushrooms are often used and tomatoes, olives, sheep's cheese, lentils, truffles and antipasti are for sale. The artful presentation of the products, the individual customer care by the shop owners and the increasing interest of tourists in these offers have led to the fact that today in central Italy - more rarely in northern and southern Italy - a Norcineria is generally understood to be a delicacy butcher shop . This also applies to the Norcineries in Norcia itself, in which northern Italian cheese, Parma ham and Apulian honey are now part of the standard range.

The name giver and core product remains the Norcia ham, which is still made according to the traditional recipe. Since 1998 this has had a protected designation of origin ( Indicazione Geografica Protetta - IGP) for authentic regional products.
