Old Cuban

The Old Cuban is a cocktail made from rum , lime , mint and champagne . It is considered a refined short drink variant of the popular long drink classic Mojito (white rum, lime, mint, sugar, soda water ), because it is infused with champagne instead of soda water. In contrast to the mojito, however, brown, matured rum is not used, but also Angostura bitters and served in a cocktail or champagne bowl.

history

The Old Cuban is one of the few well-known cocktails, the history of which is understandable and undisputed, because the recipe was only published in 2002. It was created by the bartender Audrey Saunders, who has been running the New York bar Pegu Club since 2005 . A little later, the drink was to be found on bar menus worldwide and is one of the top sellers in upscale bars in Germany. The drink is “extremely tasty and incredibly fresh”, and whoever drinks one usually has more to follow, according to several bartenders.

Saunders uses a Puerto Rican rum, but the history of the Bacardi house began in Cuba , which could explain the name.

preparation

In the original recipe by Audrey Saunders, 6 mint leaves are put into a cocktail shaker with 2.25 cl freshly squeezed lime juice and 3 cl sugar syrup and lightly pressed with a pestle or bar spoon , then 4.5 cl matured rum (Saunders took Bacardi 8 años) and 2 dashes (spritzes) of Angostura bitters as well as ice added, shaken and "straight up", ie without ice, double-strained in a large cocktail bowl . Finally add 6 cl of champagne and garnish with a sugared vanilla pod . The vanilla pods are halved, scraped out and stored in sugar for at least a week, which takes on an intense vanilla aroma. Alternatively, garnish with a small sprig of mint.
