Pascal Marie André Ribéreau-Gayon (born June 4, 1930 in Bordeaux ; † May 15, 2011 ibid) was one of the most important French oenologists of the 20th century. His work “Traité d'Œnologie” is considered to be the standard work of French oenology . Co-authors of the sixth edition of the work are his students Denis Dubourdieu , Bernard Donèche and Aline Lonvaud .

Life

Ribéreau-Gayon was born in 1930 to the university professor Jean Ribéreau-Gayon and Marie-Gabrielle née Vallantin-Dulac. His great-grandfather Ulysse Gayon was Louis Pasteur's assistant . After attending the Lycée Michel-Montaigne in his hometown, he studied in Bordeaux and Paris, where he obtained a Diplôme d'études supérieures spécialisées and a doctorate in physics, and then deepened his knowledge at the University of Cambridge and the University of California, Davis .

At the University of Bordeaux he was first assistant at the station agronomique et œnologique de Bordeaux from 1952, became Chef de travaux in 1961 and finally Maître de conférences from 1964. Since 1969 he worked as a professor at the University of Victor Segalen Bordeaux II and wrote numerous books on the subject of wine on the subject of winemaking . From 1976 to 1997 he was director there before he retired in 1999.

His merit is the introduction of modern techniques in wineries accompanied by a scientific approach. Its simple method of paper chromatographic analysis of malic acid in wine enables practitioners to monitor lactic acid fermentation in the cellars themselves. His work in the laboratory led him to the forefront of research on enzymes in grape must and Botrytis cinerea , phytochemicals and a method for comparing genetic differences between hybrid and Vitis vinifera vines.

Pascal Ribéreau-Gayon was from 1987 a member of the Institut national de l'origine et de la qualité , from 1988 President of the Commission on Oenology of the International Organization for Vine and Wine and from 1989 member of the Permanent Advisory Oenological Commission.
