Paul Ivic

Paul Ivic (born August 16, 1978 in Serfaus ) is an Austrian chef .

Life

Ivic's father is Croatian, his mother Austrian. After training at the Hotel Löwen in Serfaus, Ivic cooked at the Hotel Gasthof Post in Lech , at the Hotel Trofana Royal in Ischgl and at the Hotel der Seehof in Salzburg. He went to Germany to the Hotel & Resort Schwielowsee in Werder (Havel) . After that he had further positions in Switzerland and Spain.

Since 2011 he has been head chef and managing director of the vegetarian restaurant Tian in Vienna . The Tian has been awarded a Michelin star since 2014 . He is the only chef in Austria who has earned a Michelin star with purely vegetarian cuisine. There are only four vegetarian restaurants in the world with a Michelin star.

Ivic has also been heading the Tian in Munich since July 2018 .

In an interview with Der Spiegel in 2014, he said:

“We need the old knowledge of the farmers - only organic farms work with it today. Wheat was once the most important food. But what did the industry do with the fact that so many people are now allergic to gluten! Or take salt: that's supposed to be harmful. Sorry, this is bullshit: salt has 84 elemental nutrients that are important for the body. And what is the industry doing? Because the machines are supposed to last longer, 82 of these nutrients are washed out during processing. It's scary what we do with our food. "
