Pogatschen

Pogatschen are round, salty pastries that are part of typical cuisine in the Carpathian Basin , the Balkans and Turkey .

The spelling Pogatschen is common in Germany and Austria . In all South Slavic languages ​​it is pogača or погача , and in Turkish poğaça . The term found its way into Hungarian via the South Slavic languages , where they are known as pogácsa .

The name is derived from the late Latin word * focacia "baked dough", a derivation of focus "stove", "pan". The Italian flatbread focaccia , the French fougasse and the Spanish hogaza also have the same linguistic origins.

There are different versions with potatoes , butter , gram ( Grammelpogatscherl ), sheep's cheese or cabbage . In Greece , especially in Thessaloniki , there is also a sweet version ( Greek μπουγάτσα bougátsa ), which is filled with semolina pudding.
