Rød pølse ( listen ? / I ) (Danish for "red sausage", plural røde pølser ) is a Danish sausage specialty that isknown and availablein other parts of Scandinavia as well asin Denmark . composition

It is a thin boiled sausage made of finely chopped pork in the intestine, colored bright red with the food coloring carmine , similar to the Viennese or Frankfurter sausages known in Germany .

History and color scheme

During the recession in the 1930s, poor quality meat was dyed red and the goods marked in this way were sold to the poorer population of Denmark at low prices. This fact contributed to the fact that later Sweden developed a skepticism towards the sausages, which were also colored red, because it was only assumed that they were made from inferior meat based on their color. It was not until the government of Poul Nyrup Rasmussen as Danish Prime Minister that this was counteracted with the lifting of the import ban on sausages to Sweden, which Rasmussen had actively worked towards.

In 2008 there was an attempt at the Grøn Koncert to sell 22,400 green instead of red colored sausages, which was documented by a German television team , with the result that the green sausages, which are unusual for Danes, did not sell. However, the attempt to sell green instead of red sausages at the Grøn Koncert immediately established itself as a trademark of the music festival, so that from the concert in the following year this grønne pølser will regularly offer them, which are now also in demand.

Following the experiment from 2008, it was tested how well red and green sausages could be sold in a pedestrian zone in Germany. Only green sausages that were rated as “less strange” found buyers, but no red ones.

In addition to Denmark, boiled sausages of this type are also available on the Faroe Islands , Sweden (called röd or dansk pölse in Swedish ) and Norway .

criticism

Because of the dye cochineal red A , which is suspected of causing allergies , trade in sausages colored in this way was banned in Norway and Sweden from 1986 to 1993.
