Meat salad is a salad made from boiled or roasted meat or Lyoner cut into thin strips , which, depending on the recipe , is dressed with various ingredients such as pickled cucumbers and vegetables , onions , spices , sour cream , mayonnaise or vinaigrette . In industrially produced meat salad also is meat used.

Industrially produced meat salad

In Germany, the meat salad is usually a variant of strip-cut boiled sausage , pickled gherkins and mayonnaise, which is mainly produced industrially. By cutting the sausage into strips about 3 mm wide, they have a large surface area, which makes it easier to pick up the spices.

According to the guiding principles of the German Food Book , commercially available meat salad should consist of at least 25 percent meat, meat salad base or boiled sausage, mayonnaise and up to 25 percent pickled cucumbers. If the meat content is at least one third, it can be called a “delicacy meat salad” or “fine meat salad”. “Beef salad” contains at least 20 percent cooked beef.
