Rumbledethumps

Rumbledethumps is a traditional dish from the Scottish Borders region in Great Britain. The main ingredients are potatoes , cabbage and onions . Just like the Irish Colcannon or the English Bubble and Squeak , it is eaten either as a side dish or as a main course .

preparation

Onions and cabbage are chopped up and sautéed briefly in butter until the onions are translucent and the cabbage is soft. Then mashed potatoes with butter, salt and pepper are added and everything is mixed together well. This mixture is then poured into an ovenproof baking dish, sprinkled with cheddar cheese or a similar type of cheese if necessary , and baked until the surface is golden-brown.

variants

A similar dish from Aberdeenshire is called Kailkenny , which uses cream for the potato mix instead of butter.

In the public

In January 2009, contributed Gordon Brown a rumbledethumps recipe for a cookbook of Donaldson's School for the Deaf (a school for the deaf) in, where he testified that this was his favorite dish.

In the fourth season of the BBC television series "Great British Menu" in 2009, the dish was also presented and prepared by chef Tom Kitchin.
