Schomlauer Nockerln , also Somlauer Nockerln ( Hungarian : Somlói Galuska ), are a traditional Hungarian dessert . It consists of two types of sponge cake with vanilla pudding, rum raisins and chocolate sauce. Schomlauer Nockerln are also offered in many restaurants in Austria , especially in Burgenland .

history

The dessert takes its name from an extinct volcano, the Somló , in the western Hungarian county of Veszprém . This is a 431 meter high mountain, 15 km west of Ajka in the landscape and nature reserve "Somló Tájvédelmi Körzet". Schomlauer dumplings are said to have been created in the Hungarian capital Budapest in the 1950s, by Károly Gollerits in Gundel's restaurant . In 1956 the dessert was awarded in Brussels.

preparation

In preparation, you prepare a biscuit mixture . Then you divide this and mix in half cocoa powder . Thin sponge bases are baked from these masses. The raisins are either soaked in rum or in a rum-water-sugar mixture. In addition, you cook a vanilla pudding and mix it with whipped cream if necessary . It is prepared by layering it in a mold. The light sponge cake forms the base. Half of the raisin mixture and half of the pudding are placed on top of these and spread evenly, followed by the dark sponge cake, the remaining raisins and finally the pudding. Finally, the dumplings are left to cool for several hours. Different variants are common: Sometimes only light-colored sponge cake is used, and it is also common to sprinkle the top layer of pudding with cocoa powder. In addition to raisins, chopped walnuts and almonds are also incorporated into the layers.

Before serving, the dough is originally cut off and served with chocolate sauce, whipped cream, garnished with cocoa powder, walnuts or almonds.
