In beer gastronomy, the area in a pub (especially in brewery restaurants and beer palaces ) in which particularly large quantities of beer are served or drunk is called `` Schwemme '' . Usually these are the largest halls in the respective economy, often cellar vaults ("beer cellars") with relatively simple interior furnishings, in which there are many rows of tables and benches.

The German dictionary of the Brothers Grimm gives the following meanings for the term Schwemme:

  • "Mostly the place where animals are washed up [...] a pond, a water pit, or a water in which you wash something [...]" here in particular horses, but also other cattle. These are shallow spots in a river or other body of water, where previously polluted horses or cattle were washed and refreshed from the day's work (see also the famous baroque horse pond in Salzburg by Johann Bernhard Fischer von Erlach ).
  • "Similarly a bathing place for people [...] place full of warm or cold water in which you can swim or swim".

Figuratively:

In gastronomy circles, an interpretation in the sense of "bustle" and "mass rush", ie a "flood" of guests, is often used. Another interpretation that comes from brewers says that Schwemme is the area in which beer barrels were previously set up in brewery restaurants. When tapping there, depending on the skill of the tapper, there was now and then a "flood".

Meaning on the Lower Rhine

In the Cologne Bight and on the Lower Rhine , Schwemme denotes the serving area in front of the counter of a brewery , where the “ Zappes ” taps the “wreath” with Kölsch sticks or Altbier glasses, which the Köbes distributes to the guests from there. Usually there is a guest room with bar tables or small tables for customers who want to eat drinks but not food.

Known flooding

The most famous Schwemme is probably the one in the Hofbräuhaus am Platzl in Munich, the Schwemme there is often equated with the Hofbräuhaus itself. The Schwemme there is a large beer hall on the ground floor under a vault and offers space for around 1000 people at wooden tables. For regular guests there are shelves there where they can store their beer mugs.
