Sheftalies

Sheftalies (gr. Ʃeftaʎa) (tr. Seftali) is a specialty on the island of Cyprus . They are among the most popular meat dishes on the island of Cyprus. It is a kind of crépinette , a sausage without skin, whereby a fat net is used instead of wrapping the ingredients in a sausage casing . The filling is made from minced pork or lamb . The fat net is placed around the sausages formed from the mince and melts when grilled .

Ingredients and preparation

The filling consists of minced pork or lamb from the shoulder or leg. This is seasoned with finely chopped onions, parsley, and salt and pepper and shaped into small round balls. The balls are covered with a fat net and then grilled. In Cyprus, sheftalies are mostly served with flatbread or in a pita with salad or vegetables .
