Greens , and soup vegetables , cooking vegetables , root systems or root stuff called, is a mixture of different vegetable varieties for preparing a broth.

Soup greens vary in their composition depending on the country or region. Typical ingredients are root vegetables such as carrots , celeriac , turnip , root parsley , leeks such as leeks and onions, and herbs such as parsley , celery and thyme .

It is cooked whole as a whole to flavor broths . Then you can puree it or cut it into small pieces and roast it and add stews in which it boils over, creating a spicy and creamy sauce . This is technically called roasted vegetables or mirepoix .

Soup greens are sold in bundles in different grades.

Generally speaking, it is root vegetables; diced and sweated, you get the mirepoix of French cuisine.
