Tomato Concassée

Tomato Concassée (from French tomates concassées , "crushed, mashed tomatoes"), also known as melted tomatoes or tomato melt, is a preparation of skinned, pitted and finely diced tomatoes that are either gently braised in butter or oil or raw with other ingredients such as Vinaigrette , shallots , spices and herbs mixed together are part of numerous dishes.

Tomato concassée serves as a prepared ingredient, e.g. B. for soups , sauces and ragouts or - seasoned according to the respective recipe - as a sauce-like addition to the dish.
