Virgilio Martínez Véliz
Virgilio Martínez Véliz (born August 31, 1977 in Lima , Peru ) is a Peruvian chef and entrepreneur. He is considered a representative of the new generation of Peruvian chefs. In 2016, his Central restaurant in Lima's Miraflores district was ranked 4th on The World's 50 Best Restaurants list .
Life
Virgilio began studying law at the University of Lima when he was eighteen, which he dropped out after three years to train as a chef. He has worked in restaurants such as the Stage of Four Seasons in Singapore, Lutèce in Manhattan , Cab Fabes in Sant Celoni , Astrid y Gastón in Madrid and in Bogotá .

Projects
He is currently the chef and owner of Restaurante Central in the Miraflores district of Lima. In 2012 he opened the Senzo restaurant in the Hotel Palacio Nazarenas in Cusco and the LIMA restaurant in London.
