Willi Schäfer winery

The Willi Schäfer winery is located in the Rhineland-Palatinate municipality of Graach an der Mosel in the Bernkastel (Middle Moselle ) area of ​​the German wine-growing region Mosel . In 2014, the winery cultivated around 4 hectares of vineyards that were exclusively planted with Riesling. The winery is a member of the Association of German Predicate and Quality Wineries (VDP).

The Schäfer family can prove their roots in Graach through a deed of donation from 1121. In 1971, Willi Schäfer took over oenological responsibility as cellar master.

In 1993, Willi Schäfer became a member of the "Großer Ring VDP Mosel-Saar-Ruwer" association. In 1997 the winery was nominated as “Newcomer of the Year” by the Gault Millau Wine Guide .

In 2002, son Christoph, Geisenheimer oenologist, joined the family winery together with his wife Andrea.

Vineyards and grape varieties

In the winery, four hectares of Riesling (100%) are cultivated on extreme slopes . The individual layers are in the Graacher Himmelreich, Graacher Domprobst and the Wehlener Sundial . According to wine journalists Stephen Brook and Stephan Reinhardt, the estate's best wines come from the Graacher Domprobst vineyard . The oldest vines are around 60 years old and 60–70% of these vines are direct producers with low stick yields.

The musts ferment in traditional barrel vats . The young wines lie on the fine lees for about six months before they are bottled .

With an average yield of 52 hectoliters per hectare, around 35,000 bottles of wine are produced each year. Only a small proportion is made dry . Fine dry to sweet wines dominate the menu. Schäfer tries to produce the wines as possible from healthy grapes without the strong influence of noble rot .
