Yves Ollech
Yves Ollech (* 1970 in Wernigerode ) is a German chef .
Career
After training at the Hotel Adler in Asperg , Ollech worked in the Swiss room with Fritz Schilling in Wertheim .
Since 1997 he has been working as head chef together with owner Andree Köthe in the Essigbrätlein restaurant in Nuremberg , which has been awarded two Michelin stars since 2007 .
The focus of the Essigbrätlein kitchen is on vegetables that are complexly combined with other ingredients without the high-quality products that are otherwise common in star gastronomy.
