The Food Information Ordinance prescribes a list of ingredients (official term: list of ingredients) for almost all prepackaged items in Articles 9 and 18 . The obligation to provide a list of ingredients has existed in German food law since December 26, 1983. An ingredient list is a list of the substances that were added to a food for its production. It lists the ingredients in descending order of the amount added (based on the percentage by weight). In the case of ingredients that are highlighted in the name of the product (e.g. "with chicken"), the weight percentage of the total mass is also given for the respective ingredient (see also quid rule ). Additives such as trickling aids , food processing aids ( stabilizers ) such as anti- foaming agents do not have to be listed if they are ingredients of a partial ingredient.

Additives in foods such. B. dyes , preservatives , emulsifiers etc. can also be listed by their abbreviations, the so-called E numbers .

There are special rules for spice and herb mixtures: ingredients below two percent no longer need to be specified. However, this does not apply to allergenic substances such as nuts . Even if these could only be present in traces, a notice must be attached to the product.

There is a pack a single ingredient, the ingredient list is not necessary, because the content is clear from the sales description of the food produced.

In addition, it should be noted that every ingredient listed in the list of ingredients must also be detectable in the package.

The list of ingredients should not be confused with the nutritional labeling that has been mandatory since December 2016 .
