Älplermagronen (also Älplermakkaronen ) is the name of a dish from the Swiss Alpine region , consisting of pasta , potatoes , cream , cheese and onions . The name is made up of Alpine as a term for Sennen on the Alps and macaroni , which as a loan word from the Italian word macaroni was acquired.

history

Älplermagronen are now regarded as a traditional Swiss dairy dish. In fact, pasta only came to the Central Alps when the Gotthard tunnel was built and the Italian workers brought their usual pasta with them, which soon became established. In Switzerland, the pasta was made with the addition of local eggs. The new food quickly became popular with the herdsmen because it was long-lasting and very lightweight in relation to its nutritional value - both of which were invaluable advantages at a time when all food apart from milk and cheese still had to be transported to the alp by sheep . The "Magronen" were stretched with cheap local potatoes, seasoned with onions and made a hearty dish with cream and cheese that was easy to prepare in the kettle over an open fire and was also satisfying during the hard work on the alp.

Älplermagronen are still made from egg pasta, preferably from short thick shapes, such as B. Penne or Italian maccheroni . The pasta is cooked together with diced potatoes, the pasta and potatoes being added to the pot one after the other, taking into account the different cooking times. The amount of liquid is measured so that it is absorbed when the potatoes and pasta are soft. Then cream is added and coarsely grated cheese is pulled in and the mixture is left to stand for a few minutes until the cheese has melted. The finished dish is sprinkled with roasted onions, the traditional side dish is applesauce .

The dish has regional variations: in some areas ham strips, roasted bacon cubes or cervelat are added, in the canton of Uri the potatoes are left out. In Obwalden there are the Älplermagronen also known as Hindersi-Magronen .

As an easy to cook and well filling dish, Älplermagronen are a popular item on the menu in scout circles and in the Swiss military .

Älplermagronen are often served in mountain huts and in restaurants with home-style cooking . However, since they are now also available as ready meals in the catering wholesale trade, some of them are no longer homemade in the hospitality industry.

Macaroni and cheese, popular in North America and the UK, is a similar dish .
