The compound crystallizes in a non-centrosymmetrical monoclinic crystal system with the space group Cc (space group no. 9) . The lattice parameters are a = 863.81, b = 1372.98, c = 734.61 pm , α = 90 °, β = 120.5710 ° and γ = 90 °.

Ammonium malate is used as a food additive ( acidity regulator ). It is not approved in Europe or the USA.
