Gasthaus "Zum Roten Roß"

The Sigwart brewery , also known as “Zum Roten Roß” or “Müller”, was one of the last two still active breweries in Weißenburg in Bavaria , a major district town in the Weissenburg-Gunzenhausen district in Central Franconia . Sigwart was the oldest brewery in the area until it was closed: “1451 Beginning of the brewing tradition in the Sigwart house; During this time also construction of the inn. ” The brewery and the inn“ Zum Roten Roß ”are located at Luitpoldstrasse 17 and in the buildings at the Roßmühle.

History of the Sigwart brewery

Towards the end of the 18th century the “Rote Roß” felt the decreasing interest in “white beer”. So the brewer Johan Michael Jordan received the concession to brew “brown beer”, in the same year the brewery was built. In 1852 Leonhard Betz from Bergen acquired the brewery that is still owned by the family today: Betz - Böswillibald - Müller - Sigwart - Aurnhammer. In addition to the Schneider brewery, the Sigwart brewery supplied the Weißenburger Kirchweih with beer every year .

The brewery ceased operations on March 1, 2019. The Hofmühl brewery in Eichstätt has taken over the Sigwart brewery and brews the two types of beer Sigwart Hell and Premium Pils in Eichstätt with a different recipe.

Summer cellar

Around 16 years after the brewery was built, the summer cellar was dug in 1814 near the old Eichstätter Strasse (today “An den Sommerkellern 56”). The cellar was at times named "Betzenkeller" and "Müllerkeller" after the respective owners of the brewery. Today there is a house on the spot. In 1935 the so-called “Stöckerskeller” was acquired, which is now known as the “Bärenkeller”.
