The Schneider brewery ("Zur Kanne") is the last still active brewery in Weißenburg in Bavaria , a large district town in the Weissenburg-Gunzenhausen district in Central Franconia . In addition to the brewery and the Bräustüberl, it houses a brewery museum and can be found at Bachgasse 15.

History of the Schneider Brewery

Even if the brochure for the brewery museum says: The brewing tradition of the Schneider brewery goes back to the 15th century, but the 18th century is more likely, as Stefan Dauner, Reiner Kammerl and Gernot Römhild describe.

Accordingly, the inn pitcher goes back to the brewery the Golden Swan , the 1,772 in property Bachgasse 13 as a restaurant with brewing right was born. Their own brewery was built in 1820. In 1889 Andreas Schneider acquired the Golden Swan and transferred the brewing rights to the neighboring property, today's "Kanne", which belonged to him. The current brewery owner is Thomas Schneider.

In 1897 the brewery burned down and was rebuilt. It was reopened in 1898 together with the Bräustüberl. In addition to the Sigwart brewery, the Schneider brewery alternately supplied the Weißenburger Kirchweih with beer until the 2018 parish fair. Since the closure of the Sigwart brewery or the takeover by the Hofmühlbrauerei Eichstätt , Schneiderbräu has been the sole brewery for the parish fair for 2019 and 2020.

In spring 2015, the brewery announced that it would cease operations immediately. Since then, beer has been served in the restaurant by the Strauss brewery from Wettelsheim. However, the production of the Kirchweih beer was continued. In 2018, the owner announced that it would also resume regular beer production on a smaller scale. Since the "Bräustüberl Zur Kanne" reopened, Schneider Märzen and Schneider Helles have been served again.

The tailor's cellar

With the introduction of brown beer , every brewery needed a beer cellar to store the beer. The Schneider brewery initially used the cellar dug by previous owner Michael Geißelbrecht in 1842, not far from today's Sigwartkeller. In 1894, Andreas Schneider bought the cellar of the Zum golden Ochsen brewery , which was in operation as the Schneiderskeller restaurant until 2000 and now houses a restorer.

The Gosebrauerei in Leipzig

In 1999, brewery owner Thomas Schneider announced together with Deutsche Bahn AG that he was planning to "thoroughly renovate the complex in the Bayerischer Bahnhof in Leipzig and set up a brewery in the historic premises". After around 14 months, the restaurant and internal brewery were opened on July 19, 2000. Among other things, Gose beer is brewed there, an old, top-fermented type of beer.
