The Colombi Hotel in Freiburg im Breisgau is an owner-managed luxury city hotel .

Since 1995 it has been part of the alliance “ The Leading Hotels of the World ”. The connected gourmet restaurant Zirbelstube was awarded a Michelin star annually from 1982 to 2019 .

The hotel is located in the city ​​center of Freiburg . It is located on the Rotteckring opposite the Colombipark and its Colombischlössle , from which it got its name.

history

The hotel opened in June 1957. The hotel was run by the Colombi Hotel Dr. Klaus Lauer KG ". On the occasion of the 500th anniversary of the University of Freiburg , prominent guests from politics and business were received in the same year. In 1959, the Saudi Arabian King Saud ibn Abd al-Aziz and his entourage spent several days at the Colombi Hotel.

The current operator, Roland Burtsche, had worked in several luxury establishments in the USA after an apprenticeship as a chef in Hamburg, attended a hotel management school in California and then worked as a sous-chef at American President Lines . Back in Germany, he married his wife Waltraud in 1967. The couple, originally from the Kaiserstuhl, took over several catering establishments until they finally bought the Colombi Hotel in 1978. In the following years until today the hotel has been rebuilt, expanded and renewed several times. In 1995 the hotel was expanded to include the residence, which can be reached via a glass walkway on the first floor. At the same time, an underground car park with 80 parking spaces was created for hotel guests. In addition to its banquet area, the hotel has been using the building of the former monastery mill in Ehrenkirchen for events since 2012 .

From 1981 to 2014 Alfred Klink was head chef of the gourmet restaurant. Harald Derfuß has been the kitchen director at the Colombi Hotel since August 2019.

Furnishing

The hotel has 112 rooms including seven suites , 16 apartments and 40 junior suites. The integrated restaurant consists of the three rooms Zirbelstube (gourmet restaurant), Falkenstube and Hans-Thoma-Stube. There are also five banquet rooms, a breakfast room, the Graf Anton café, the piano bar (Davidoff Smokers' Lounge), a wine cellar and a spa and wellness area. In the building there are several showcases from various clothing companies and jewelers as well as a luxury fashion shop.

Hans-Thoma-Parlor

The Hans-Thoma-Stube was originally built into a farmhouse from 1776 and was later integrated into the Colombi Hotel. It is reminiscent of the Black Forest painter Hans Thoma . The wooden chairs were designed by Hans Thoma with typical Black Forest motifs. There are also two original pictures in the room: a picture of his mother and a self-portrait.

Wine cellar

The hotel is built on historical land, on which the old city wall ran and near one of the Freiburg city gates . One side of the wall of the underground wine cellar below the reception hall still consists of the old city wall.

Companies

The hotel has 170 employees, around 30 of whom are trainees. The house was recognized by the Rhein-Main Business Club and the Federal Employment Agency at the award of the 10th German Job Investor Award in 2007 in the category of training positions for young talent.

Flecklehäs fountain

On the terrace of the Colombi Hotel there is a fountain whose bowl and column date from 1884 and replaced a fountain in front of the former preacher's gate. When the future Grand Duke Friedrich II visited the city on December 7, 1885 with his wife Hilda von Nassau, who had been wedded since September , wine flowed from the two well pipes and served to the party. Since 1961, a bronze figure in the hat of the fool's guild of Freiburg's Fasnetrufer has been enthroned on the fountain, which was designated as the wine fountain as a result of this event . The design for the figure comes from the wood sculptor Franz Spiegelhalter (1899–1988), who u. a. also created the mask of the carnivorers. The association had given the figure to the city on Euphrosin Day (March 11th) 1961.

Movies

In 2011, Heinz Hoenig was seen in the ZDF television film “Mach mich Glück” in some scenes at the Colombi Hotel. In George Roy Hill film version " The Dragonfly " from the year 1984, the Colombi Hotel was one of the locations of the film.
