Diethard Urbansky

Diethard Urbansky (born May 12, 1958 in Olsberg ) is a German chef .

Career

After training in Brilon from 1976 to 1979, Urbansky held various positions in hotels in Prien , Oberstdorf and Switzerland until he cooked in a star restaurant in Düsseldorf in 1984 in the “San Francisco” restaurant. In 1985 Günter Scherrer's star restaurant "Victorian" followed in Düsseldorf.

In 1986 he went to Munich in the three-star restaurant Tantris under Heinz Winkler . In 1988 he moved to the “Hilton Grill” in Munich as head chef, where he was awarded a Michelin star in 1991 . From 1999 to 2001 he was “Chef de cuisine” at the “Käferschenke” in Munich, together with Fritz Schilling.

In 2001 Urbansky moved to the “Dallmayr” restaurant in Munich, which is located on the upper floor of the Dallmayr delicatessen, as head chef . In 2006, Urbansky was entrusted by Dallmayr with the development of a concept for the new opening in August of the same year. Two maxims that apply to the architecture of classical modernism have been clearly reflected in his culinary art since then:

  1. The form follows the function: concentration on the product, its texture and its scent.
  2. Less is more: unnecessary items and decorations are avoided until the heart of a dish has been found.

One year later, his innovative gourmet cuisine was awarded one Michelin star in 2007 and two Michelin stars since 2009. Urbansky's cuisine is rated 17 points in the Gault Millau.

Urbansky left the Dallmayr on May 31, 2018 for “private reasons”.
