The Dixie brewery was founded by Valentine Merz and started production in 1907. During Prohibition it traded as the Dixie Beverage Company. In 1989 the brewery went bankrupt and filed for Chapter 11 bankruptcy. In 1992 the brewery was reorganized, special beers were introduced and the company was saved. The brewery was completely destroyed by Hurricane Katrina in 2005 and then looted. The thieves built wooden ramps to use wheelbarrows to remove pipes and other equipment and later sell them. Brewing operations could not be resumed and the beers are now being made using the contract brewing process at Minhas Craft Brewery . Efforts are still being made to move the brewing operations back to New Orleans. In 2014, legal proceedings in which the owner family wanted to prevent the demolition of the original brewery building and the construction of a new medical center on the site failed. Construction began in September 2014.

Since June 2017, the production of Dixie beer has been relocated from Minhas Brewery to City Brewing Company in Memphis.

In July 2017, the majority of the company was taken over by Tom Benson . He announced that he would bring production back to its own brewery in New Orleans. In August 2018, Gayle Benson, wife of the late Tom Benson, announced that she would build the brewery in the east of the city of New Orleans with an investment volume of 30 to 40 million US dollars.
