Fish milk

As milt or -milcher , also briefly milk or Melcher called, which is seed of male fish , molluscs and other aquatic species designated. This fluid is excreted on the roe during the spawning season , which causes fertilization.

Fish milk is used fresh or preserved with salt as food. It is used for flavoring sauces or in dishes made from whole fish. Mainly the milk of carp and herring ( herring milk ) is traded , more rarely also of mackerel or cod .

Fried fugu fish milk

Fish milk is rich in amino acids, especially arginine and histidine . The Japanese cuisine knows milt ( Japanese 白子 Shirako ) among others by Tara ( cod , in the strict sense Pacific cod ), Fugu and tai ( sea bream , in the strict sense Pagrus major ). Here it is also served fried.

In Austria , carp milk breaded in flour, eggs and breadcrumbs and baked in fat is eaten.
