Frangipane cream
As frangipani cream (also Frangipancreme , fr. Creme Frangipane ) refers to a standard cream in the food production . It is used as a filling compound for almond-based baked goods .
A confectioner's cream (vanilla cream) is prepared for the preparation. At the same time, macaroons are crushed and mixed with cold butter . Then stir the butter mixture into the cooled cream.
Another preparation consists of a cream made from flour , sugar and eggs mixed with marzipan . Usually it is a cooked cream; But there are also recipes in which the basic mixture is incorporated into baked goods and baked together with the dough.

- As a dessert with chocolate sauce or sour jam or fruit jam
- As a cake filling that is often glazed with chocolate .
- For cakes as a cream on pre-baked bases and topped with fruit, e.g. B. Crostata Tutti Frutti
- Part of the flour is exchanged for grated almonds , and the cream is then flavored with amaretto or cognac
- For a mocha crème, mix the frangipans with coffee essence or strong mocha
