Fruit pulp

In the field of food processing , fruit pulp or fruit pulp , or pulp for short , denotes a pulpy, lumpy mass of one type of juicy fruit , which is made from the edible parts of the fruit by coarse chopping or by gentle steaming or precooking. The pulp consists mainly of pulp in a pulpy form, mixed with pieces of fruit, sometimes with whole fruits. Typical types of fruit are processed into pulp , but also tomatoes, for example . Fruit pulp is not a food for the end consumer, but a so-called semi-finished product for the processing companies in the food industry . Among other things, jams and juices are made from fruit pulp .

The term fruit pulp is used, among other things, in the Austrian food book . The designation fruit pulp or pulp is used with the same meaning , for example in the German jam regulation. The term fruit pulp or pulp is rather out of date.

Manufacture and use

Fruit pulp consists of the edible part of the fruit, especially the pulp . The fruits are cleaned, unwanted parts such as stems, pods and core or stones are removed if necessary. Then the fruits are mechanically chopped into pieces or prepared by steaming or precooking. The pulp is a pulpy, lumpy mass. In contrast to fruit pulp, it is not strained or homogenized using a similar process . Fruit pulp contains pieces of the pulp, sometimes whole fruit. To explain the term pulp , the consumer magazine test used the expression “fruit piece mass”.

The production of fruit pulp is used primarily for the purpose of large quantities of fruit after the main harvest period longer tenable to make and supply the processing plants in the long term with a simple to use product. The shelf life of the pulp can either be increased by a physical process such as freezing or by the addition of a preservative such as sorbic acid . The Austrian food book names "heating, deep-freezing, cooling or freeze-drying " as physical processes, but only " sulfur dioxide or sulfur dioxide developing substances" as chemical preservatives. These methods of conservation mean that pulp has a longer shelf life than freshly harvested fruit that is only stored refrigerated.

As a semi-finished product, fruit pulp is not manufactured for direct consumption, but processed into various foods and ingredients. These include jams, jams , sweets, fruit juices and fillings for baked goods.
