Galbi is a meat dish from Korean cuisine . It is ribs that have been marinated and then grilled . It is also known as “Korean barbecue ” inside and outside Korea .

Preparation and ingredients

Galbi is usually made with beef ribs . These are placed in a marinade and left to steep overnight. The exact composition of this marinade varies depending on the region. According to the prevailing opinion, the best Galbi comes from Suwon .

The ribs are cut into small pieces and then grilled on a grill in the center of the table . A charcoal grill is traditionally used for this. Recently, however, gas grills have been used more and more . Galbi is sometimes also prepared with pork ribs . This is then called "Dwaeji galbi" (Dwaeji = pig). To refer specifically to the preparation with beef, the term Sogalbi (So = beef) is used.
