Georg Winckler (also von Winckler or Winckler von Dölitz ) (born May 23, 1650 in Leipzig ; † August 4, 1712 there ) was a Leipzig merchant, councilor and mayor.

Georg Winckler was the son of Andreas Winckler , the builder of the Torhaus Dölitz , and grandson of Georg Winkler , who had acquired the Dölitz estate in 1636 and was ennobled in 1650.

In 1672 Winckler received citizenship rights in Leipzig, and in 1679 he was elected to the city council. In 1694 he became the town's builder. In 1708 and 1711 he was mayor of Leipzig. He was also the Royal Polish and Electoral Saxon Councilor, Assessor of the Electoral Saxon Schöffenstuhl and Imperial Palatinate Count .

From 1675 to 1678, together with his brother Paul (1659–1710), he owned the Dölitz estate and after the payment of his share of the inheritance was the sole owner. He made an expansion of the Dölitz Castle. Georg Winckler tried twice in vain at the Saxon court to have a church built for the village of Dölitz. In Leipzig he was head of the Neukirche (later Matthäikirche), which was re-consecrated in 1699 after serving as a storage room for over 100 years.

Georg Winckler was married three times, from 1671 to Katharina, b. Weise, from 1679 with Sophia, b. Ruppold, and from 1699 with Maria Elisabeth, b. Bergner. His son Jacob Benedikt (1699–1780) from his last marriage continued to run the Dölitz estate.
