Glycerol triheptanoate or (GTH) is a triglyceride with three enanthic acid residues. Since September 12, 2007 it has been the official EU raw material for marking risk meat .

Glyceroltriheptanoate is a triglyceride ( glycerol - ester ) of enanthic (C 7: 0, also n called -heptanoic).

use

GTH was chosen as the meat marker because it is cheap, non-toxic and non-washable. In 2005 it was recommended as a suitable meat marker by the Institute for Reference Materials and Measurements in Geel, Belgium . GTH itself is colorless and odorless and is mixed with the actual dye for use. For the coloring, the meat is heated to 80 ° C in a sterilizer and then the GTH is added. The minimum concentration of GTH is 250 mg per kg of fat.

Biological importance

Glycerol triheptanoate has been used in the treatment of pyruvate carboxylase deficiency , with the fatty acid residues producing acetyl-CoA and propionyl-CoA via anaplerotic reactions due to their odd carbon number . Furthermore, experiments on rats to elucidate the treatment of epilepsies have shown an effect on the central nervous system.
