From 1994 to 1996 he was active with the amateurs of 1. FC Nürnberg , but was also in the professional squad (2. Bundesliga) during this time. On May 5, 1996 he came to his first second division when he came on in the 86th minute for Goran Ćurko . This game remained the only one for the professional team of the FCN.

In 1996 he moved to 1. FC Saarbrücken in the Regionalliga West / Südwest . Here he was a regular goalkeeper from the start and was promoted to the 2nd Bundesliga with 1. FCS 2000 .

From 2001 he was active with the Stuttgarter Kickers . After 15 missions in the Regionalliga Süd 2001/02 he left the club.

In 2002 he had actually ended his career, but reversed that step by going back to 1. FC Saarbrücken , which had injury problems. Until 2005 Ebertz played 14 times for the second team in the Oberliga Südwest, including briefly as a defender. In this role, he scored a goal against Hassia Bingen on May 15, 2004 (final score 4: 0). In 2004/05 he was once again in the second division squad of 1. FCS, but did not play a game.

In 2004 he started to work as a trainer and looked after the U16s of 1. FC Saarbrücken. From 2006 he was the coach of the U17, with whom he was promoted to the B-Junioren-Bundesliga in 2007. From 2007 he coached the FCS U 19s, with whom he twice won the regional league championship and reached the semi-finals in the DFB junior club cup in the 2008/09 season. The graduate in administration has been working in the Saarland Ministry of the Interior and Sport since 2003.

From July 9th, 2007 to June 10th, 2014 Ebertz was Vice President of 1. FC Saarbrücken.
